Anyone doing low carb??

just looking to see if anyone does or is interested in low carb cooking outdoors or low carb ideas

yes.  I think there are several of us here.  I've been doing it for ... OMG it's been 17 years.  I've slipped a few times, but it works for me as I don't have a sweet tooth.   I kinda miss pizza. 

Just go easy on the sugar in your rub and sauces and most of the proteins we cook here are a-ok.   There's nothing wrong with a salt and pepper brisket when doing low carb.  Bacon is fine, eggs fine.  Salads with modest dressing (ranch is pretty ok) are fine. 

Let me know what you're thinking, some people get headaches for the first two weeks, others crave bread and sweets.  I experienced neither and it seems to be working.

PS funny story, 17 years ago I was 29, my wife was pregnant.  I had this nostalgic idea that my parents look so young and ... skinny ... in my baby pictures.  I was an ex division 1 athlete, I had let myself go.  I did what was called Atkins at the time for a few months, got back to running weight and ended up 3 lbs lighter than my wife the day of my daughters birth.  (yeah sharing that is going to come back to bite me, she's a total hottie then and now.)   We got great pictures!

  I have been for over 2 years just looking for folks that have or are on the eating plan for ideas or even give out recipes

A while back I went on a very strict low carb, no dairy, no added sugar diet for about 2 years. I was eating a lot of lean meats and veggies. No potatoes, corn, pasta, breads, desserts, etc. Ended up with very positive results. I was also working out and swimming at a local health club.

Over the past year I have started backsliding. Quarantining and moving hasn't helped at all. I would really like to get back into eating better and finding a little more discipline. I would be interested in hearing what others are doing.

I have done low carb diet a couple of times with good results. There are some cautions.  If you have impaired renal function, stage 3 or more, then you may make it worse.  If you are diabetic, type 1. Or type 2 with insulin dependence, you will have to lower insulin doses as needed (only with your doctors participation) since blood sugars will be lowered as well.  If you are diabetic type 2 and do not take insulin---you will improve your diabetes dramatically in some instances.  But again your diabetes meds may need adjustment by your doctor. Some have been able to stop meds.
Keep in mind that the diet has not only high protein but also moderate fat.  You will use the fat to make energy via a different pathway than carbs. the result is lactic acid at levels you can tolerate. THIS DIET IS PROOF THAT DIETARY FAT DOES NOT CAUSE OBESITY. IT IS CARB THAT IS CONVERTED TO FAT AND EXCESS IS STORED AS FAT IN THE TISSUES (old beer belly). Also proof that logic and fact are not always the same.
The Hopi Indians are an example of this. Before the white settlers came and introduced sugar and refined flour, they were a healthy, slender tribe who lived off the wildlife of the land, and did some farming for other basics. In fact, they raised corn for the wagon trains, and received flour and sugar in return. After the influence of the "civilized" diet, they developed obesity, diabetes (highest incidence of any ethnic group) and higher cancer rates.  Food for thought? :2cents:

Yes, I am not doing to well with low carb at the moment, but I definitely focus on low carb cooking.

Here is my attempt at a low carb pizza. I have tried a lot of different ways to do a cauliflower pizza crust. The goal has always been to get a crust that I can pick up and eat with my hands. This attempt still fell short of that goal. While it still may not be pizza, it was a good lunch.

I smoked one head of cauliflower and pulsed it in the Magic Bullet. I did the same for 1 cup of quick oats and added an egg. Prebaked the crust at 450* for 15 min. Added sauce and some veggies with a light sprinkling of cheese. Baked for another 10 minutes or so.
