What temp for pork loin?
« on: November 11, 2020, 07:19:55 PM »

Going to do a pork loin wrapped in bacon tomorrow..
Got it rubbed down and in fridge now.

What IT do you cook to?
I've seen another post where just cooked to 130.
I though 165 was the safe point for pork.

Going to have some Hog Apple Beans with it.
Beans recipe says 325 and was going to do Pork Loin at 350.
Should be able to both at 350 and pull beans early if needed.

I trust our pork producers, I try and end up with about 147° when I grill it!  But this is also a meat I will try and brine 1st!

I'm with Bentley here to.  I cook pork loin and tenderloin to 140, cover and rest for 10 to 20 minutes.   That will allow the internal temp to rise to around 145 or so.  Yumm.

I like 135ish for tenderloins and 138 to 140 for loin. I would do it slightly less if I were the only one eating it, but others would think they would die if they ate it and it was pinkish.

Big Dave I have friends like that to.  All meat has to be well done with no pink.  They are the same with eggs.

140° for me too. If you partially cook the bacon before hand, it should crisp up somewhat at 350° pit temperature.

Sometimes change is hard to take especially with food.  Although I do not agree with them some just like their beef well done another’s rare.  I prefer mine somewhere in the middle about 130 for beef and 145 for pork.  Of course chicken is still at 165

Was just able to log in. That connection issue is back.

Thanks for all the replies.
140ish seems to be the consensus.
Going on the grill in a few minutes.

On the grill.
Finished cook pics.  Pork Loin didn't look as good as it tasted.  Beans were great. First time for each.
Also, decided to smoke some cheese while I was at it.
