I saw that on the BBQ Bible email this week.  I have never tried that cheese.

never heard of marinading cheese. Guessing they just season it?

never tried grilling cheese but I fry it all the time. I like 3/8 to 1/2" min thick. put it in to a very hot cast iron pan until it browns then flip and brown the other side. i usually just hit it with salt and pepper then.

I've done argentine grilled provolone a handful of times. A Google search will return many recipes. It's really good fresh off the grill. My only issue with it is if your are making multiple things, by the time you get around to eating it sometimes it's a bit past it's best form.

The version I found that worked best involved freezing the cheese, but I can't find the exact recipe at the moment.

Direct heat yet a ways from the fire seems to be the key at this for this version, which I think is why it is popular in Argentina.

I haven't had that brand of grilling cheese, but I have had haloumi, which is a greek grilling cheese from a specific area, and a local dairy's version of haloumi that they have to call grilling cheese and it was enjoyable as well. It holds its shape and gets grill marks at all, mild salty flavor. It looks like this company marinates it like others point out, but you could always do that piece yourself.
