Preferred Beef in Mexican dishes?

25 years ago I would have been thrilled to get shredded beef in any Mexican dish calling for beef.  My need to practice cooking (and eating) for BBQ Competition's put an end to my enjoyment of shredded beef and now I much prefer ground Beef in any dish.

Was curious how other felt who do not have an aversion to Brisket!

It depends on the dish to me.  I don't want a ground beef burrito for instance but I am OK with it in an enchilada.  Maybe it comes down to if I am eating it with my hands in a tortilla or torta, I want it shredded or chunked.  If I am eating with a fork, I am ok with ground beef.

I'm good either way.
If it's in a flour/corn tortilla, I like both.
Carne Asada in tacos is usually chunks which I like as well.
When we make tacos, it's usually with ground beef, but pulled port or brisket are used at times.

Got quesadillas from a food truck we drove to find. I got cow and she got chicken. First time and they were very good. So about 2 weeks later found out he was set up at another little brewery a maybe 1.5 hour drive away and went back. Both got the same thing again, but he texture was different on mine, she thought I was crazy. I went over to talk to him and had said we got stuff from you about 2 weeks ago, he remembered us because we drove an hour to find him that time. I said was the beef ground that time and shredded this time, he said yes. He had some shredded beef left from the day before and figured he would use it  up. He said I have done hat before but no one ever noticed or hey never asked about it. I liked the shredded better in what we got from him, but I never really gave it much thought until I had that comparison.

I use ground beef, skirt or flank steak, or chuck roast depending on what I'm making and my mood. I really like using chuck roast for Mexican shredded beef that we use mostly in tacos. I'll use steak for fajitas or quesadillas and even sometimes tacos. We usually use ground beef for enchiladas, nachos, and sometimes tacos. However, in a restaurant I never order things with shredded beef, it's ground beef or steak. I haven't ordered shredded for so long, I'm not even 100% sure why anymore, I just know a decade or two ago I had enough displeasing shredded beef restaurant experiences that I decided I didn't like the way the places I was eating then prepared their shredded beef.

really impossible for me to answer.  Taco Tuesday, most common in our house is ground beef.  Next up would be shredded chuck.  On a special occasion I'd like skirt steak in a fajita.  I think shredded and chopped or even sliced would be their own options/votes.

As much as I'm a beef guy, when in Mexico, I normally order Al pastor or chicken street tacos.  Best I've ever had was taco Guss in Cabo.
