well the 4th of July got away from us, we were at a friends property and were supposed to come home at noon.  We got home around 9:00 and missed the neighborhood BBQ.  So we invited family over to cook the three racks of ribs and corn, cucumber salad and coleslaw for a 5th of July celebration.

Pretty standard stuff.   Rubbed lightly with molasses, mccormicks sweet and smokey rub, costco BBQ rub.  I no longer remove the membrane, I like how they cook better with it on.  225 for three hours, wrapped in foil and apple cider vinegar for an hour.   Quick application of sweet baby rays and chili honey.  Rest for a 15 mins (I do this on the shutdown cycle)  and serve.  Very sweet, but that's how my fam likes them.

It looks like a rack of Spare, St Louie cut & some Baby Backs, is that right?

I was thinking similar, but thought two STL and one BB

well I think they were two spares and one "meaty" baby back in the middle.  My wife and I like the spares, my oldest daughter only likes baby back.

They look too squared off to be spare ribs although the STL cut is from the spare rib.  They looked very good.

Seems you're right!!!

Louis Style Ribs. St. Louis ribs start off as spareribs, but they're trimmed down (the sternum, cartilage, and rib tips are removed) to a rectangular shape and more uniform appearance that's easier to cook and eat, making them a great rib for beginners.
