This is what they look like after 7 minutes in peanut oil at 325°. I think a tablespoon is a bit to much for a McNugget. I swear they got bigger as they fried. Also, looks like breast meat to me, but I know it is not. I am really confuse as to what the brown was all those years ago! They were really good, to big, but really good.
If I ever do it again, I think I will grind the meat, then mix with the eggs in KitchenAid to form the paste. I was reading that McNuggets TODAY have 57% fat in them (a mixture of canola oil, corn oil, soybean oil and hydrogenated soybean oil). And I thought 2 pieces of the skin was goin to be to much fat! No wonder I still like em when I eat em! Might add a little of those oils next time, not sure I could keep them together if it was 30% or so.
