I used to love McNuggets in the early 80's.  Back in the good old days where half the inside might be white and the other half a brownish color. Back when Parts is Parts was OK!  Before kids and soccer moms destroyed the McNugget.  Well I decide I would see if I could makes some that took me back to that simpler time!  So I took about 2lbs. of boned and skinned thighs, pulsed them with 2 skins in the food processor with 2 eggs and some seasoning.  Got it real pasty, then took about a tablespoon of meat, formed and coated with corn starch, then put in a water, flour, mustard and spice batter and froze.  You end up with this before frying.

This is what they look like after 7 minutes in peanut oil at 325°.  I think a tablespoon is a bit to much for a McNugget.  I swear they got bigger as they fried.  Also, looks like breast meat to me, but I know it is not.  I am really confuse as to what the brown was all those years ago!  They were really good, to big, but really good. 

If I ever do it again, I think I will grind the meat, then mix with the eggs in KitchenAid to form the paste.  I was reading that McNuggets TODAY have 57% fat in them (a mixture of canola oil, corn oil, soybean oil and hydrogenated soybean oil).  And I thought 2 pieces of the skin was goin to be to much fat! No wonder I still like em when I eat em! Might add a little of those oils next time, not sure I could keep them together if it was 30% or so.

I think I will look for a cookie cutter type device.  I will then spread out meat paste and almost freeze, then cut out shape (were 4 original McNugget shapes) and enrobe with batter and freeze.  If you made 50 or 100 at a time it would probably be worth it, they cook up quick and are really rather good.  You can customize them like sausage to have the flavor profile you want.  The only thing I don't like is getting the batter on them!

I like them because they are battered and not breaded. I have seen bags of them for sale at some of the little stores we go to, some actually say mcdonalds chicken nuggets or something similar, they probably can't call them Mcnuggets.But they were the same shapes.

 I really go for Wendys Spicy nuggets.

I would eat those Bentnuggets.

That hot sauce they had when they did that run of spicy Mcnuggets was good, about 4 fries dipped in it and my nose was running.

Those do look good and like you I used to love them, once they changed them I rarely get them. Nicely done.
