What to do when you realize you have bought twice the amount of onions you can use before they go bad?  Well, you look around the pantry, discover some beef stock and make French Onion soup!

French Onion soup is good. Float some cheese and a few croutons on the top. Delish.
We vacuum seal/freeze onions.  Some diced, some sliced.

I take extra onions and put them in my slow cooker (crock pot) with butter for 8-12 hours to get caramelized onions, then freeze them.
