Costco always has trout for a good price and I hear they're good quality. I like to pan fry or grill them, but there are too many in the pack for a single meal. Anyone have a tried and true recipe for hot smoked trout? I'll probably do them on the Memphis which only gets down to 180. Thanks.

Could help you with pan fried or oven cooked, but got nothing for you with hot smoke...

I always do mine @ 325º..Depending on the thickness it takes about 20 min to do a filet. I oil the skin side and season the other.I don't turn.Cook to ~ 125º.
