Brisket Adventure

I picked up a 19 lb. USDA Choice brisket packer yesterday. cost was $2.77/lb. Today I will trim and separate the point from the flat and trim both. This is a video that I got some guidance from. https://www.youtube.com/watch?v=zcr46FL4Ug4

Not a technique I would use.  I would be even less likely to trim a marbled brisket like that.  I hope his instruction meets your needs!

That is the way I normally trim, but used some of his trimming techniques.
