Prime Rib for Christmas and Beyond

Local Kroger'had a sale on rib roast this week and I picked up a couple. My total cost for both with a jar of horseradish was $94.67

That looks like a great deal. we get deals like this. Not sure what grade USDA inspected is.

Got a Bone in at Costco.  We were gonna do Rib-eye for Christmas, but have decided to cut the bones off with a nice amount of meat on them and have the Beef Back ribs instead!

Got five 6.5 lb ribeye roasts from Aldi's for $7.99/lb. Cut them into steaks and will use the bone sections just like Bentley.  Went back and got another 8.5 lb one for Xmas day for prime rib.

Our H-E-B has Select bone in ribeye roasts for $9.99 and Prime for $17.99.  Y'all got some really good deals.

Our Safeway has rib roast for $4.95/lb. but it's not choice. I suspect that it's select.

I cheated and I spent too much money buying an already cooked one at Sam's Club.  Now all I have to do is throw it, the ham, and the turkey breast in the oven to reheat them for Christmas lunch.

We stopped at Sam’s Club after church.  They were sold out.  I guess I’ll use my typical method in the MAK.

I prepared the rib roast for cooking using this method https://www.youtube.com/watch?v=ZxDKuocQ7L4 The plan was to smoke the rib eye portion then sear and serve. My biggest concern is that my roast are not nearly as marbled as the one shown in the video. My eye portion, with all of the fat trimmed and lack of marble, is very lean. I'm afraid that it will not be tender or flavorful.  The roast turned out to be 2 and 3 bone. 3 bone trimmed eye weighed 2.5 lb. Another lesson learned, Choice grade and low cost, does not always equal success. Any ideas as to what i might do to rescue the meal.

 :D, very good. I've decided to cook the smaller rib roast filet, 23+ lbs, tonight to check out the results. I'll revisit my local butcher shop if necessary. This just reminds me of a lesson that I learned a long e ago, if something sounds too good to be true, it probity is.

It is seasoned with s&p and Montreal Stake. Onthe grillat 180 degrees.
