I will say you get a real nice golden skin with Cherry, but I am not your man for wood, all the same to me...Cooking, I am not a fan of Low n Slow for Turkey, I like it in the Pit just the way mom cooked it in the oven. I will Brine for 24 hours, then cook at 375° for an hour to get the fat rendering started, then turn to 325° till Legs are fork tender, usually about an IT of 195° and usually about 3-3 1/2 hours more.
