Pellet choice for turkey
« on: November 19, 2017, 04:14:13 PM »

Smoking the bird this year and looking for your choice of pellets. Been using Lumberjack competition blend of hickory, maple and cherry for everything of late. Also how long to smoke? Seen to start the Traeger on smoke until internal temp reaches 110 then bump it up to 350 for an internal temp of 165. Thoughts???

Sorry it took so long to see this.  I will say you get a real nice golden skin with Cherry, but I am not your man for wood, all the same to me...Cooking, I am not a fan of Low n Slow for Turkey, I like it in the Pit just the way mom cooked it in the oven.  I will Brine for 24 hours, then cook at 375° for an hour to get the fat rendering started, then turn to 325° till Legs are fork tender, usually about an IT of 195° and usually about 3-3 1/2 hours more.

I am also a Fan of Cherry wood for Turkey.  Used Lumberjack 100% the last 3 or 4 years and have a bag of Smoke Ring 100% Ready to go for this years.  If you haven't already,it might be a little late to get a good brine, but I highly recommend it.

Apple pellets.
Crank it up to 400 before I put it on, then drop it to 325 for the cook.  For me, this has produced a wonderfully crisp skin with a beautiful color.
I use alder pellets in tube for about 45 minutes at the beginning too for a bit more smoke too.
