Daughter asked for ribs so I went to the freezer. I had stocked up on ribs a while ago when my local grocery store had them on sale. I did a 2-2.5-1 cook @ 235. This was the first time I used a temp probe on ribs. I remove them from the foil when the ribs read 200 degrees between the bones.
Daughter was happy.

Yep, appx 200° on just about any meat is usually the magical number for tenderness!
