Lutefisk was better in the olden days when the local grocery store would put a gunny sack of dried fish outside the door. All the local dogs would walk by a add a little local flavor before a slab was bought and taken home to soak out the lye.

Parts of it can be jelly like. We had a little of that with this last batch my wife baked. Most of it was fairly firm, but less firm than fresh fish.
