For sharpening I have a Worksharp Ken Onion edition and I recently picked up a used Wicked Edge sharpener. I haven't used either very much yet.

I use a 9.5' Shun Reserve Hollow Ground knife i bought on the cheap.  It was 80% off at a shop i just happened to walk into in manhattan.  And i use a Work Sharp Ken Onion sharpener for all my knives and a shun honer.

How do you use a Work Sharp on a hollow ground edge?

Thanks for the good info on sharpeners. I have a lot of good kitchen knives that I like to keep sharp. I have a whetstone and a hard stone. My Dad taught me how to use them. I use to get them so sharp I could literally shave the hair on my arm with them. I don't have the patients for that now so I'll be looking into the recommended sharpeners.

For meats like brisket and turkey I use an electric knife.
