I've made it a practice to upload photos from my phone and edit posts on a laptop. Something weird was going on tonight, two failures and then out of order pictures and a page break. Oh well.
Pork meaty baby back ribs. A- no fuss, came out great with a perfect smoke ring, nice color, a tad dry.
Beef Ribs (from the gifted grass fed stash) C- at best. Flavor was there, tenderness was not. I really just want those giant dinosaur meaty plate ribs I had in Dallas TX, but cannot source them here. I also have to confess, I think the beef would have benefited from either a lot more time or a lot more temperature than the pork.
