Cochinita Pibil is a new favorite for me.  I don't follow the cooking method, but I do keep to the authentic spice profile with a bit of extra heat.

Update, I went with Bentley’s suggestion and made ABT’s.  They were a hit, everyone loved the slight smoke flavor from the pellet grill.  The only complaint was that they went to quickly as they were a big hit.
