Camping off the grid last weekend.  Redneck engineering and some lump charcoal. 

Chicken thighs were really excellent.   Crispy skin I just don't get on the pellet smoker.

Pork was good but I do prefer the consistency of the pellet pit at home. 

Still a really fun cook.

Wow... for a minute there, I thought you were using the remains of a two seat outhouse.  :rotf:

 dk , my thoughts as well (2 seater).  Looks like you did rather well with your set-up.

I love these responses.   My good friend works in municipal waste water management and these were two machine lids that were not created to specs.   They could be garbage or could be smoke stacks by our imagining. 

Perfect that the guy who works at what he affectionately calls a xxxx plant brings the smoke stacks that remind people of an outhouse.

PS understood this needs to be moved to non pellet smoker discussion at some point, but glad you're all having as much fun with my post as we had building and eating off this thing.
