Decided to get out the LEM jerky canon and make some caseless snack sticks. Used LEM regular snack stick seasoning for 5 pounds and pepper for 5 pounds.
Currently blooming.

They were on till about 8 PM, I pulled them and let them rest/bloom in a paper bag, then cut them in half and put in zip lock bags. Didn't actually get to try one yet. Will do that after work. The look and smell great. Will post more tonight.

Started them at 100 degrees for an hour then up the temp 15 degrees every hour till the smoker was at 165. Just have to be carefull of a fatout. Time was roughly about 7 hours. Crushed up some hickory pellets for smoke, but not allot as caseless snack sticks really obsorb smoke flavor easy.
