Pulled Pork for 75 People

Making enough pulled pork for 75 sammies. I'm thinking 6, 7 to 8 lb butts should be enough? Here is my thinking, 3 sammies per lb. Minus 3 lbs per butt for the bone, fat & shrinkage. Your thoughts?

Sounds about right, in the ball park, I think. Figure roughly 1/2# uncooked butt per person or so.

Butts are usually about 8# each bone in.  At 1/2# per person uncooked, you should get 16 sandwiches per person.  Five butts would get you 80 sandwiches.  If you make too much, you can vac seal and freeze.

Another way to look at it, I typically get 55% yield finished product verses uncooked. Six butts @ 8 lbs each would yield 79 third of a pound sandwiches.

75 people with an appx 5oz. sandwich.  The last 3 times I have cooked PP for the Vol Fire, bone in with gunk taken out, we were at 55%.

75 x 5oz = 375oz of cooked pork needed.  375oz is 23.43lbs.   23.43 x 155% is 36.32lbs of raw meat!

So you are on the high side, but shoulder is cheap, and well, lets be honest, it is your BBQ, so the crowd is probably gonna eat 15% more then a normal BBQ joint!

I know there is a ton of input on this thread already but my .02  I always go 1/2lb uncooked meat per person. You can tweak that a bit if there are a bunch of sides or if yours is not the only main protein source
