Beef Ribs

First time smoking beef ribs on the FireCarft.

I’ll update throughout the process.

As with beef ribs...they are either good or bad. 2 ribs were outstanding. The rest were good but tough.

They looked promising. Thank god someone brought by thinly sliced pork chops that were marinated. They saved lunch.

Short Ribs?  How long did you cook them?  One of the few ribs that need 3-4 hours on about 300° for me!

They went on at 8:45am at 235. They were in the car for about 45 minutes to work so they were not really that cold. 12:15 they got wrapped and thrown back on for 2 hours. One piece was melt in your mouth. Another piece was good. The rest, tough.

It had to be the meat. I’m a pit master in my own mind!
