Brisket Pricing
« on: May 05, 2018, 06:28:56 AM »

Just curious how pricing on choice or better grade briskets sell for in your area. I stopped by a quality meat store yesterday and they have choice or better for $7.00 a lb. Not sure what the local Costco pricing is but will be looking as I plan to do my first brisket soon.

At that price it must be for a trimmed brisket flat.
Local Walmart has been 2.56LB forever for choice packers.
Local grocery store sometimes has prime packers at 3.25.
At 7 bucks a lb, I personally wouldn't be cooking much brisket, or
give a couple more bucks per lb for a SRF brisket.

It's likely evident I'm not at all educated on brisket pricing. The meat store I mentioned is in a location where people with more disposable income reside. We don't mind paying a fair price but to over pay for a product that isn't any better than what can be found elsewhere is a no brainer. Even if rated prime and not choice or better did the price sound reasonable to my wife or I. We do purchase from this store on rare occasion but usually just spare ribs or kabobs. It is clear a trip to Costco is forthcoming as the local grocers ( Fred Meyer's & Safeway ) around here have let their quality of meat go down over time and it's hard to find good meat other than Costco or Cash and Carry stores.

It's been 3.49/pound across the board in my area for awhile now. Costco prime, Gordons choice, Walmart select. All the same price. That's for full packers. Trimmed flats start to get to the 6 or 7 a pound range as stated above.

These prices are roughly +/- 20 cents.  In Raleigh, NC over the past few weeks, I have found:

Restaurant Depot: $2.50 & $3.00 for whole packers (2 different grades but not sure which).
Costco: $2.95 & $3.50(prime) for whole packers.
Harris Teeter (large grocery chain): $9(maybe $8) for trimmed flats.

I haven’t checked or recall prices at other stores.

Side note:  Publix grocery stores are fairly new in this area. They have tri tip for $8.69. Tri tip is not common around here.

I finally cooked a whole small brisket on my GMG DB after a few poor attempts at flats.  I'll post pics and what I did tomorrow since it turned out perfect.  It was a super trimmed 8 pounder and $3.99 a pound.  HEB has them with the deckle fat removed for $2.99.  Packers are $1.99, I think.  I'll double check on that tomorrow since I have to replenish my supply of cold beverages after using them for cooking aids.  Can't remember what prime was, but they were expensive and all way too big for what we needed.

Got a 9 lb Prime one from Sam's for $3.26/lb on Friday of last week. Noticed Walmart had trimmed flat for $5.69/lb.

@ $7/lb, I would jump up to Wagyu and order from SRF.  Its about $10/lb and you won't find a local brisket that can compare.

With that said, there is nothing wrong with a $50-60 Costco brisket.  I cook them all the time.

I've never seen it for less than $6.99/lb in the Puget Sound region at a local store or butcher.  :(

Local super market has good looking USDA choice packers for $1.99/lb. I'm heading north for the summer next week or I'd jump on it.

3.99/lb in Indianapolis, but they are rare, and they basically fly off the shelf, or we get stuck with the flats....
