Need a Simple Recipe

The Rapidan River Master Gardeners have been asked to come teach a class for an FFA summer leadership class.  They also wanted us to do a simple "hands on" activity.  We will be teaching on herbs and are going to have the kids make their own bouquet garni as the project.  Our age range is pretty broad -- 11 to 18 -- so we are keeping our herbs for the bouquets pretty simple -- parsley, bay, thyme, rosemary, sage and oregano.

We would like to have some pre-made recipe cards so the kids could see what they might like to make and then make a bouquet garni to match a recipe.  In reading it seems like soups and stews are the best bet, but some of the recipes are so complicated.  I will probably just end up making up my own recipes, but we have so many good cooks on this forum that I thought I would start with you folks.

Do you have any good, but fairly simple stews or soups which could have a bouquet garni added to them?

The fewest ingredients may be French Onion Soup.  The bouquet garni is just a dozen whole peppercorns, six thyme stems and three bay leaves.  Tie a string to the bouquet garni and tether it to a pot handle so it can be easily retrieved.

The downsides—it takes a lot of onions and a rather long time.  Additionally, the onions require close attention at the end of the browning, when they are cooking down to almost disappearing.

Wonder if you could cook the onions using pz's crock pot method.  PZ if you see this, would your crock pot onions work in French Onion soup?  Otherwise, yes, that is a simple soup with a perfect bouquet garni.

Oh yes, they work great in French onion soup - I tried it, and my wife (and I) really enjoyed the experience - savory and sweet, the crock pot onions result in a rich experience

Marinara. Saute garlic in some oil. Add some herbs, and a few red pepper flakes. Can of 28 oz crushed tomatoes, half can of water, and some salt. Simmer for 20 or 30 minutes. Throw in some parmesan, basil, or parsley. Season with salt, and maybe a touch of sugar. Done.
