Re-heating pulled pork?
« on: July 09, 2018, 01:05:06 PM »

Got a question for everyone out there.  I have 60 lbs of butts to smoke on Wednesday for a pulled pork lunch on Thursday, I also have 25 lbs of butts to smoke for a party on Saturday afternoon.  I have room on the smoker to do it all at once, my question is can I do the 25lbs for Saturday then and put it in a slow cooker in the bottom of my fridge till Saturday morning and re-heat it or will it lose to much flavor and not be fresh enough?  I appreciate any and all thoughts and comments.

Food Safety .gov says 3-4 days in the fridge for cooked meat.  If you want to do it a week early I think you need to freeze it.  You can still re-heat it in the slow cooker or bag it and heat it sous vide if you have the equipment.

I will always add some of the rub and either chicken stock or apple juice when I reheat pulled pork.

I cooked these shoulders on a Friday and put them in the fridge over night.  Poured the juice into a separate container.  I put them in a slow cooker the next day.  You can read what was done.  They tasted great and stayed very moist.  Just keep temp low once it gets hot in the slow cooker.  Otherwise, you may dry it out if you keep it at 300-350 IMO.

Agree that you need to give ample time to reheat slowly to avoid drying out.

Yeah, that would be ideal...  I agree about reserving some of the juices.  Always helps with re-heating.

Vac seal and freeze. Then throw in a pot of boiling water to defrost and warm up. I have had perfect results each and every time. Tastes like it just came off of the smoker.
