I need to try this method. I just won’t get much smoke flavor at 275. I’d have to use a tube for sure.

I run at 180F for the first hour then bump to 275. Surprisingly running low for the first hour has little impact on the overall time - BB take about 3 hours and STL about 3.5.

Even as good as they were I still prefer St. Louis style ribs being they are (IMHO) meatier.  Costco has the BB's for $2.79/lb and the SLS for $2.69/lb.

Can you explain what you mean by 'meatier' ?   By weight, baby backs have more meat than STL's. Of course STL and spares are bigger, so there is more meat on each bone, but the ratio of meat to bone/gristle is less.
