It is on this one, a small amount of knowledge on how to make sausage does not seem to translate to Frankfurters!

So today, we stuffed the remaining paste.  We smoked for about 2 hours, IT was 120 when we pulled.  We will see how a water bath finish (was gonna say sous vide but that would not be accurate) does for the skin texture.  No idea how long it will take to reach 155°.  Will also be curious to see if the Maverick Redi-Chek probe is ruined after this!

To much work for arguably average results.  Flavor is so subjective, but the Waltons seasoning is OK, but not what I would choose for a hot dog to taste like.  The outer texture was much better, but still a little tough for me.  It has a "snap" which some might enjoy.  I simply do not have the ability to blend spices to match what flavor I am looking for, and certainly do not have the patience to try and find it. 

I will probably try it one more time when it gets cooler, with beef, pork and chicken as the paste, just to give the seasoning one more chance and I will probably try both cellulose and hog casing to give that a fair shake...

But I think I will stick with sausage making and leave the hot dogs to the commercial guys...

And the gray discoloration, that is simply meat that was not exposed long enough to the smoke.  I see why they are hung and not laid on a rack. Although I have no idea how the top of a link can take on smoke and change color and the bottom portion that is sitting on the grate and I assume is getting just as much smoke, does not.  That is a puzzle to me.

They look good from here.

what flavor are you looking for? I guess I never really paid attention to what a hot dog tastes like, bologna to me just smaller. Not a hue dog fan although I do love me some burnt black and bubbly over a fire. Not a big ketchup guy either but on a blacken hot do it is great to me.

The flavor thing is hard to describe.  It would be something like the Costco All Beef, that would be as close a description as I could give.

I took a risk in buying the Waltons seasoning mix.  It is quite edible, and I am sure many would enjoy it.  Its just not for me.  I think I will add heaps of garlic and onion powder and a few other spices and see if it can be tweaked on the next batch.

I have, even made then.  To me they are a sausage and not a hot dog, maybe no difference to some.  To me there is a difference.  Maybe I am romanticizing the Millers, it has been almost 20 years since I had one so maybe they are not as good, but back then, there was no better tasting All Beef Hot Dog.  I guess I should bite the bullet and order them.  I can live with paying a $1.13 each for the 40 links, its the $75 in shipping that kills me.

Have you ever tried a Knackwurst? A good one makes Miller's taste bland.

$103.67...$2.59/dog + bun...not bad...I see I was wrong on the shipping.  I guess I should do it to either confirm they are the way I remember or get them out of my head!
