I picked up two huge T-bone steaks today that weigh about 2.2 pounds each. They are labeled Angus Select, but they have a fair amount of marbling. I am thinking about smoking them and then do a reverse sear using my grill grates unless I am convinced otherwise. One issue I have with this is switching my GMG DB from smoking to grill. I have the two piece drip trays. I am assuming I would have to take the steaks off and then either line up the holes for grilling or remove the top tray. I would then have to get the temperature up for grilling. All this time the steaks are cooling off. Another option is to sear them on my blackstone.
