Just had a few links of Caribbean Jerk sausage that I bought at the Reading Terminal Market in Philly in late December that I had previously smoked and vac sealed. Oh my were they good! Anyone ever make their own of that flavor?

I have, and it was one of my very few sausage failures. The recipe was actually out of the book I believe I recommended to you a while back. I would not suggest it. Taste and texture was strange. That was probably the only recipe I've tried from that book that I didn't care for. That said, I would love a good jerk sausage. Love that flavor.
On a side note if you have a Kroger or anywhere else with a Murray's cheese shop they sell an excellent jerk flavored cheese. I buy it often. Here is a link to the cheese itself.
