wet aging...How long after sell by date is safe?

I saw a great looking prime full packer brisket yesterday at SAM's.  I couldn't pass it up even though I had no intent to cook it anytime soon and do not want to freeze it.

How long after the sell by date would you be comfortable wet aging it in the fridge?

I have gone 30 days several times, no problems.
I have heard some go 45 and even longer, I just haven't although I would not be afraid to.
Others will be able to lend you advice on the longer times I'm sure.

What is some what hard to determine is when was it vac sealed?  The use by date would not concern me as much as that date, which some put on labels and others don't.  If you ever have the ability to ask the meat department you buy it from if they know that date, I would add that to my aging (as long as I an comfortable with the integrity of the vac bag) date and go 35 days.  If you can't find that date, I would add 5 days from when you bought it and use that as my aging time.

Regarding this next statement, whether I am right or not I have no idea.  But I have found little benefit in going more then 35 days.  Might just be personal preference.

I was told by one meat shop I used to go to that the packed on date was 2 weeks before the sell by date.

I believe the sell by dates are made up by the same individuals who make the saying in the Chinese cookies .  Just saying
