Pork Belly Price Question
« on: March 28, 2019, 09:05:05 PM »

Local grocer has rind on belly for $2.99/lb and skinless for $3.49 lb. Question is it better to buy it skinless than with the rind on? I haven't cured a whole lot of bacon yet and just need some input on which would be the better buy. My initial thought would be skinless as butcher has taken the time to remove the skin. Still though it is a great price for belly from what I have seen at Sam's Club lately.

A few bellies ago I had skin on, its in here somewhere and it made no difference taste/cure wise etc. I didn’t care either way because price was the same. As easy as it peeled off I would save the few cents per # and skin it myself. Have fun either way.

I would go skinless. You are paying for the skin and attached fat.. Skin removal - cutting thru the fat can be challenging for a first timer..Consider skin on for future curing attempts.  :2cents:
