Fascinating, the skill involved in that is remarkable.
I remember as a kid the meat market we went to the butchers were cutting everything from 1/4's & 1/2's. They would trolley them in overhead and have at it.
Sure don't see anything like that anymore.

 I had no idea...With the speed and sharpness of the knives, I would expect to see some extremely severe cuts to the workers..Being alert would definitely be a priority.

 The whole process is most interesting. Not old school butchering for sure..
