How to Freeze and Reheat Ribs?
« on: February 04, 2020, 01:22:13 PM »

While getting out a rack of ribs to smoke I looked at another rack that has been in the freezer a while.  So I smoked both racks.  I don't want to pig out (trying to loose weight) and eat both racks, so I want to freeze one of them.    I am assuming I could seal them for the freezer, but how would I reheat them?  I do not have a Sous Vide.

Many tell me that pork freezes well. I feel that is a correct statement.
I would think that you could just thaw them, wrap them with foil and reheat them in your oven - 225° or so.

Yep, or throw in an aluminum pan covered and reheat.  If you want a bit of a crust, take the cover off for a bit on the back portion of the reheat timeline.

How are you sealing them for the freezer? Are you using a vacuum sealer? If so you could put the sealed bag in boiling water to reheat the ribs.

I either do oven or like I had done the last ones, with my sous vide supreme. You could use a circulator also. I believe I did my last ones at 145 not sure on the time probably just put them in for 3 to 5 hours and left them go until I was ready. They come out great, have done brisket, meatloaf and pulled pork the same way. Not sure I ever tried chicken.

Great then you can just put the sealed bag in boiling water to heat them up.

I have been doing this for years now. I will smoke as many racks as I can or have. Then once off the smoker let cool some ( not completely ). Cut them into 4 rib sections and vacu-seal those. Then straight to the freezer. When we want ribs we pull out how many packages we want, then bring a pot of water to boil and turn off the heat. Drop the frozen packages in frozen and wait until they are at a nice warm touch ( usually about 45 mins) . Hard to tell the difference than when we first cooked them.
We also do this with brisket by cutting it up in 1 lb slabs.

Just my 0.02 cents. :)

You can also use Sous Vide to more gently reheat them. I do this fairly regularly with pulled pork. 1-2 hours @ 150-155 when it's thawed. For frozen ribs, maybe 2 hours?
