I thought I read that you used your stove top when I quickly read your post but it wasn't until I saw the video that it hit me.  That was awesome.  I need to get my Traeger fired up so I can give my Griddle Hack a test run.  I am actually thinking of using it to crisp up wings that I smoke on the other side of the XL on the left fire pot and them crisp them on the griddle on the right side.  Not sure if that griddle may get too hot though with the smoker set to 275 for a few hours cooking the wings.

That was an awesome demonstration Bentley!  You gave me ideas for my Mario Batali cast iron griddle on my Pro.  Thinking of setting it to 200° or something and start there.  With the hood open it will keep feeding pellets.  Open Flame Mode would be too hot.
