Questions about Restaurant Depot Beef

There are large vac-sealed packages of various cuts of beef at Restaurant Depot.  I’m curious about the flank steak and skirt steak.

I asked 2 RD employees what to expect when you open the package but they didn’t know.
I want to know if the package of flank is a large hunk of meat that needs to be butchered or is it a package full of flank steaks that somewhat resemble what you get at the grocery store.
Same with the skirt steak.

Anybody here ever buy or work with these?

I hesitate to answer, cuz I never know if all stores are uniform, but it is pieces when I buy them.  They vary in weight, but it is not one large hunk in this area.  You should ask at the front desk to speak to whomever in in charge of the meat dept when you go in.  They will certainly be able to tell you!

Similar to Bentley, I bought chucks that way and they were pieces.

Like are you talking similar to bacon end pieces? Long time since we have been to a restaurant depot.

But I’ll take Bentley’s advice and talk to the right person there. There is a lot I need to learn about the huge packages of various cuts that they sell.

Not RD, but I buy bags like that all the time from Cash & Carry. They are going to be several pieces, probably around 6, just stacked up. You won't have to butcher anything.
