Live view of my oven with Fireboard

Getting ready to dehydrate some sliced ginger in my Thermador gas range... setup 4 ambient probes, one in each corner of the oven rack.

First thing I noticed back left was warmer when the oven was off. Can you guses why?

Looks pretty even to me.
After I turned the light bulb off... the back left was warmer because the light was on, after turning it off things really evened out.

The little dip on the right of the graph is when I opened the oven to put the ginger in.

By the way,  I'm not sure exactly what temperature the oven is set at, it's bellow 150F based on the knob... it's the lowest possible setting that will turn on the burner. Also... it's running in convection mode.

Once dehydrated, how do you store the ginger - just in jars? How long does it keep? What do you use it for?

Have been playing with a small dehydrator borrowed from a friend, but so far it has just been apple slices and berries.

I'm using the ginger to flavor some Kombucha  ( fermented sweet tea ).  I'm only drying it to modify the flavor profile,  I've found using fresh ginger creates a  lemony flavor that I don't really want.  So drying it first seems to eliminate that lemony flavor and rather than kombucha that tastes like lemon ginger,  I get kombucha that tastes very similar to a great ginger ale.

If I was going to store it... I'd vacuum seal it..

I'm playing around with the Fireboard and oven again this morning.  Running on conventional oven mode,  same knob position as last night.

I'm in the market for a remote monitor system myself. I really like that the Fireboard has six probes.

I love the Fireboard...  I bought the Extreme version,  customized to my own desires... 6 ambient probes and grate clips,  2 food probes...  ( I wanted 6 ambient probes to test with , rarely would I need more than 2 food probes )
