Beef Sausage Cook

My first try at Beef Sausage. It came out very well. I cooked them at 250 for about 60 mins or so. I used collegen casing instead of hog casings this time. The last time I did brats the hog casing came out a little chewy.

What was your fat/lean ratio and what spice make up?

I did 70% lean brisket and 30% brisket fat

I used the following spices:

- 6 pounds meat/fat
- 3 tbsp coarse salt
- 3 tbsp coarse pepper
- 1 1/2 tbsp paprika
- 1/2 tbsp cayenne
- 1 cup cold water

Trying to judge them by the knife but can’t tell size. They look fantastic.

what size casing? 21mm? How did they taste?  They look great.

I used 30 mm collagen casing. I must say I loved the taste. If anything I would pull them off the smoker a tad bit earlier.
