Tri Tip with Chimichurri sauce

We celebrated the father-in-laws 75th yesterday with tri tip!

Now the wife and in-laws like their steak more well done than I do, so I took the opportunity to try sauces.   The lower one is just A1 sauce.  The green was the Traeger chimichurri recipe, but I added rub and let sit overnight.   It was a real hit, my previous chimichurri's didn't turn out half as well.

Normal players, two 2.25 lb tri tips, smoked for 90 mins, then reverse sear on the gasser.  145 IT on the green one, 155 and up on the brown one.

As noted, a bit over done for me and you, but still looks delicious!  I have meant to make some of that chimichurri sauce, as I don't believe I have ever tasted it!

What does chimichurri sauce taste like? Since it is made with fresh ingredients, it has a refreshing taste reminiscent of grass. It has parsley and oregano to blame. Also, the strong garlic flavor makes it pungent while the red vinegar makes it a bit tangy.


This time I didn't use any stems in the Italian parsley, then adding the rub, and letting sit overnight.  Made a big difference.   I'm torn between just loving tri tip with all the variety of options vs chimichurri being my new favorite.

Another great variation for chimichurri is to go half parsley and half cilantro, or just cilantro instead of parsley.

I have always done with skirt steak. Always wonderful, but long time since I have done. Can’t find a recipe to share, but chimichuri with beef is better than you can imagingine. Absolutely wonderful!
