I get the wifi or bluetooth for a pit or a temperature gauge, but for sous vide?  Do I really need to change the temperature or amount of time?  For this device, I just cant see it!

I've never changed cooks either.  But, I would agree for those that want to start up a unit while at work to have food ready when they get home I can see the value of the wifi.  It was also nice to have for piece of mind when I had an 8 hour cook going and new I was going to be out of the house for 4-5 hours of the back half of the cook time.  Nice to have the machine tell me the cook time was finished and it would hold temp until I got home if I didn't want to turn it off or change the temp setting.
