Pork Belly

I had never cooked a pork belly, and my wife was able to bring one home from work. I really like free meat, and this one was incredibly good.

I got my wife to cube it. Usually her knife skills are better than mine, but she must have gotten bored because the pieces changed size and shape. We seasoned with a standard rub and into the smoker. The FireCraft was set at 225 and I kept it there for about 3 hours. I then added wrapped the pork in foil and added some BBQ sauce. Now I had some more space so I added some chicken wings for variety. I held the temperature steady for another hour. Then I bumped the temperature to 275 for about 30 minutes to get the chicken wings a bit crispy. The pork belly was great. We shared some with our neighbors to be friendly.

Looks really good.  Love the pork belly cubes, and never go wrong with wings.
