). Not a lot of difference. A mix of about 3/4 pork and 1/4 Vinison. Spices almost identical, with the Irish having Allspice & Sage. Have them air drying, will sous vide tomorrow @ 135° for about 2 hours. They will then be food safe I believe, so all they will need to have done is be reheated or grilled to finish. There is about 5lbs of each.
Giving them to our neighbors that have given us so much mulch!
