Just have to try this.
Bentley, you might giggle watching me try to make pastrami and corned beef.
It's going to be fun either way.
Might lean on you though.
My plan...........?
Jerky time also.

I did not go down enough and thought jerky out of Brisket, this should be an interesting study!

You wont have any issues with it, it is just a matter of space and time...It is one of the few times I will try and be meticulous in my trimming!  Just enough cured fat to make the meat sing!

Watching as I have a small brisket I was going to make into pastrami/corned beef.  Was going to use it with my homemade sauerkraut to make Reuben sandwiches (along with my homemade rye bread).  Is there a difference between corned beef and pastrami?  Seems to me I heard there was but not sure. 
Thanks for posting.  Looking forward to see your method and how it comes out.

I should have been more clear, my bad.
Jerky just eye of round and maybe late tomorrow, more like Monday.
Packer is where I am sure you will come into play. NEVER  corned one and I want to.
Wet age the rascal for as long as I can before the Corning.
Pastrami and Corned Beef is the plan,

Not sure the real definition, but my Pastrami is corned beef that has been smoked and a specific rub added to it before that is done.  And since I ripped off the NY Delis, the finished cooking is done in steam...

Man, I messed this whole thing up.
The brisket transition to corned beef and pastrami is what I meant to be the subject.

Look up my post under wild game for a brine/cure. I do both my CB and pastrami the same way. The cooking process is different between the two.
