After many nights of just sitting and watching the controller cycle, I finally put some food on last night.

I get a nice steady blue smoke in the 200-220 range at my current settings. So I cooked these for a couple hours at 200. Then a couple more hours at 250-275. Wrapped at some point for about 30 minutes.

I only had one rib, but they were delicious. I've always been a fan of pellet cooked ribs.

They certainly do!  How could you have only one?

It was midnight and I'd had plenty to drink....

My son came out of his room because he smelled them, and finished them off.
