What's Happening?

I have a Traeger and using the Smoke X2 and Lumberjack Cherry  The ambient temp levels stabilize at 233°when set to 225°.

I hava 13#er brisket at I'm getting to 175° at 3.5hrs.... I'm at 6hrs now and I'm at 189.5°.  The brisket is marbled well and I trimmed to 1/8"-1/4" of fat


This seems quick to me....i was expecting at 13#er to take 12-13hrs at 225°.

What am I missing?

Where is your probe?  Have you checked other spots?  Could be right between the point and flat in a weird spot.

If the meat temp is accurate, I'm guessing you are just running hotter than its reading.

I just moved the probe and the temp went down 9 degrees.  Like you suggested, I think i got the probe right in the fat btw the point and flat.

You might be surprised home many hours it takes from 180° till done...

Also, couldn't hurt to use a thermometer to check grill temp to make sure RTD isn't giving a bad reading.
If nothing else it's nice to know your controller reading is accurate.
