Cooking for two during the Pandemic
« on: January 13, 2021, 10:20:06 PM »

My wife, Claire, and I have been self quarantining.  However that has not prevented the cooking for two at home.  Tonight  we had saute stuffed chicken breasts with pasta in a mushroom cream sauce and broccoli.  For desert we had a homemade Alsatian Apple Tart.  The chicken had slices of Prosciutto, Provolone cheese and a stuffing of Italian bread crumbs, diced mushrooms garlic and Jalapeno peppers.  the chicken breast was then wrapped, dusted in flour, egg wash and more Italian bread crumbs.

Restaurant Depot had boneless thighs for $0.39/# a few weeks ago.  Not sure if they still have them.  Of course, it was a 40# box too.
