Forgot how good that is.  We used original spam, in 1/4" slice, fried until browned, and then wiped out the pan and basted the eggs. (with water).  Great way to break the pattern of bacon or sausage.  Price is right as well.

That sounds like a great breakfast, we do it up on the griddle some Sunday mornings.

I am a Spam person also. just the regular stuff. Treet has a different taste to me.

You seem to always be looking for things to do. If you have a meat grinder, grab a pork but and grind it, I used a trail bologna seasoning the last time and just made small logs, have also used mini loaf pans and put it in to form. Then either smoke it or my last 2 times I SV at 140 for 6 hours. Now it is sealed and pasteurized so it will keep in the fridge for weeks or freeze. I slice it and fry it like spam. I think regular spam only has salt, sugar and Cure in it.

We use to have spam and eggs sometimes when I was a kid.  Bacon was expensive and we were not well off financially....so spam it was!  I liked it and had no idea we were not living like royalty.  As we got older, we did have bacon more and spam less.  I stay away from both now, not because of flavors, but fat and salt content.

Followed up with Spam and scrambled eggs this AM.  Easy and fast, but enough for now.

So you will use the sliced patties and fry them or you chunk up and cook like hash?

smaller chunks, fried first for a while, then added two eggs and one ounce of milk. Whisked well and then poured over the spam. Almost made an omelet but decided to scramble.  It was very good, but not as tasty as using cured ham chunks.

I have some Spam. I think I would like to try making Spam Musubi. It is a very tasty way to eat sushi sans the raw fish.

You have the right idea. I would skip the eggs and double down on a variety of kimchee.

I've been a SPAMHEAD forever.
I grew up on the stuff.
I haven had any in about two weeks and now I ready.
The latest out there in the markets is SPAM with real Hormel Bacon! I've tried it and it is also very good. Actually I can swing either way.

Fry it up good and crisp.
Have it with some nice runny jumbo eggs and some cinnamon toast.
YOUWZA, now that's a breakfast!!

If you were in Korea and fell into a kimchee pot while fighting in the dark of winter, you would never get near it again. Or so I was told by an old Korean vet. The smell alone was enough besides the damage to his uniform. Apparently, it is cabbage fermented in a large crock usually in the ground with a cover over it. Covered with snow, he stepped on it and the lid gave way.  I have only tasted it once and not impressed.
