Actually, I also found I like doing burgers on the griddle, although the wurst went over the direct flame.

Second play with the griddle, and the first time with it in the RH position, not over the direct flame. It got plenty hot enough, and it meant I have options - cast iron, normal and direct flame.

Kind of like a Bánh bao?
Had to look them up - round here they are known more as char sui buns.

But yes, just like that. As I already play with bread and dough, it seemed an easy thing to try. The hardest part is having left-over pork! :D
