Yeah, at ≈$14.00 per pound, somewhat expensive but intriguing as an hors d'oeuvre.

I'm not much of a pork butcher but I might be able to reproduce the configuration.  I wonder if smoking it like a butt, using the same rub and technique, is the best.

I've had them.  My brother bought a case one time.  I treated them similar to ribs and put a rub on them and smoked them.  They were OK, but even back then I felt the price was kind of high for the amount of meat you were getting.

They are the hind shanks and around $10-12/lb at Pioneer, frozen and shipped with dry ice. Mad Scientist did them like ribs. 225* for 1 hr, and then 250* for 2.5 hrs. and the bone pulled out easily and he said they were super good. I think he used a rub.  I would.
Conclusion: Interesting, but too expensive. Maybe after I win the lottery.

there was a place we used to go that had them now and then apparently they were hard to get consistently. They are off the back legs some place. The place we went deep fried them like wings. They are pretty good. I don't remember how they sauced the anymore if it was their wing sauces or something else.

I remember seeing them at a place like US Foods or Sysco not long after I had them but didn't but a case.
