My though is, if it tastes like pork bacon, why make it ?
Beef is more expensive than pork isn't it ?

I always enjoy the bearded butchers. I am planning a drive up to their meat shop at some point this year when the wife releases me from chores for the day on the weekend. I will take my father in law with me, I think he can really appreciate the place as well.

That should be an informative visit. Their knowledge, skills & equipment rates top drawer...  Let us know how it turns out..
