I never trim the fat off either.  The outside dog sure does like the scraps mixed with her food.  I usually buy them with the deckle fat removed at H-E-B , but they are a little more expensive than a packer.  The prime briskets are way too big for us.  I'm still not sure what or where the deckle is, so maybe someone here can explain where it is.

If I am not mistaken, it is where the sticker is.  It is the big section of fat between the point & flat.

I'm still not sure what or where the deckle is, so maybe someone here can explain where it is.
