What is Santa bringing you?

Santa’s bringing me $200 to put toward grilling gear.  What should I get?  One large purchase or multiple small items?

I know I need to step up my thermometer game.  Thinking about blowing it all on a tappeque or a Smoke with a Gateway.  But I could stay with the generic one I have and upgrade to a Thermopen and have leftover funds to use elsewhere.

I have an older Traeger Texas with a Pellet Pro controller.  I bought a Don Godke downdraft, but had to take it off.  It didn’t breathe well enough to get a clean burn.  I also have a smoke tube.  It would be nice to have the bottom and/or front shelf.  I need help prioritizing my wants.

What would you do?

 Keep looking as there are deals now that the season is winding down..Post Christmas sales can be good too..If you can't wait use a dartboard.

A new SS heat shield for my Texas.   Every time I clean mine out more rust flakes, not to mention it's badly warped. 

The gift I'm most excited about is a hand crafted leather chefs apron.    Wife is getting it for me as evidently I've ruined a few too many shirts during gatherings we host.

Granted it will be just after xmas but I am getting a vacmaster vp215.   :cool:

My grill and smoking equipment is in good form so I am hoping for some homebrewing equipment.  I'd love a new fermenter to increase my beer output, and a wort chiller to shorten the time I stand around watching three gallons of liquid cool from boiling to under 100 F.

I am sliding funds away for a possible drone purchase after the holidays.
The main consideration has been Mavic Pro vs Phantom 4 Pro.

Another Shun knife to add to my small arsenal would be fantastic . . . maybe a sujihiki. I hope Santa is registered on Pelletfan!
